Stuffed Breakfast Sweet Potato


Half a roasted sweet potato Dollop of coconut yogurt Pecan / sunflower seed butter Cinnamon and hemp seed Raspberries Recipe: Roast a sweet potato in the over for 45 minutes to an hour on 375 degrees. But in half and store away part of it for tomorrow morning’s breakfast. Top with coconut yogurt, pecan/sunflower seed butter (or whatever nut butter you prefer), cinnamon, and hemp seeds. Add some raspberries and voila! You have yourself an easy, nutrient dense breakfast in no time! Fun fact! Raspberries are chalked full of antioxidants and vitamin C. Hemp seeds have a healthy dose of omegas 3 and 6 and plant-based protein. Sweet potatoes have wonderful carbohydrates that our hormones love SO much as well as vitamin A.
